Rainbow Kale Salad

Zesty Vinaigrette

  • 1/4 cup Lemon Juice

  • 1 TBSP Apple Cider Vinegar

  • 3 TBSP Extra Virgin Olive Oil

  • 1/2 TBSP Maple Syrup

  • 1/2 TBSP Dijon Mustard

Salad (3 servings)

  • 6 cups kale, chopped into fine pieces

  • 1 cup red cabbage, shredded

  • 1 beet, shredded

  • 1 carrot, shredded

  • 1/4 cup sunflower seeds

  • 1/4 cup pumpkin seeds

  • 2 medium mandarin oranges, sectioned


1. Place the chopped kale in a large bowl.

2. In a measuring cup, whisk together the ingredients for the dressing. Pour the dressing over the top of the kale then use your hands to massage it into the leaves. The kale should reduce in size.

3. Add the cabbage, beet, carrot, pumpkin seeds, and sunflower seeds to the bowl then toss to combine.

4. When ready to serve, top with orange segments and enjoy.
