
Is it considered a treat?
Authentic sourdough bread is not considered a treat. Consuming whole-grain and sourdough bread regulates blood sugar better than commercially processed breads.
However, like all foods, it’s important to eat it in moderation with the appropriate serving size. The recommended portion is 1-2 slices per meal (slice size can vary depending on brand).
Why?
Because sourdough bread is fermented with lactobacillus cultures, which are probiotics (beneficial bacteria) that can aid in digestion and help the gut work more efficiently.Â
How?
During the long fermentation process, bacteria start consuming the starches, producing lactic and acetic acids, and breaking down the gluten. It also has all the fiber in it, making it more slowly and evenly digested, preventing spikes in insulin.
Most breads from the store are made with enriched white flour, preservatives, and additives. They don’t have much fiber, so when you eat them, it goes directly into your bloodstream. It spikes your blood sugar and is very high on the glycemic index. This is not true with sourdough.
How do you know if it’s authentic sourdough?
Read the nutrition label. Real sourdough bread is made with only flour, water, salt, and a sourdough starter (a culture of wild yeast and bacteria). Â
Check the ingredient list. Avoid versions with preservatives and additives like yeast, vinegar, citric acid, and added sugars.
Real sourdough has a shorter expiration period. If the bread you purchase has a shelf life of a few weeks, it is not real sourdough bread.
