5-minute Salmon Salad


Time: 5 min Servings: 4


Ingredients

2 6 oz. cans of salmon, drained (Wild Planet is a good brand)

1/3 cup reduced-fat mayo (made with olive oil)

1 medium celery stalk, diced

3 Tbsp red onion, diced

1 Tbsp fresh dill or 1 teaspoon dried dill

2 tsp fresh lemon juice

1/8 tsp black pepper


Directions

  1. In a medium bowl, combine the drained salmon, mayo, celery, red onion, dill, lemon juice, and black pepper. Stir until well mixed.


  2. Serve salmon salad as a sandwich on whole grain bread, in a lettuce wrap, on a bed of greens, or enjoy with cucumber slices or whole grain crackers.



  • Store leftovers in an airtight container in the fridge for up to 4 days.

  • Bread, crackers, etc. not included in nutrition.
