Garden Salad with Lemon Herb Vinaigrette

Ingredients

Lemon Herb Vinaigrette

  • 3 Tbsp extra virgin olive oil

  • 3 Tbsp lemon juice

  • 1 tsp maple syrup

  • 1/4 tsp sea salt

  • 1/4 tsp onion powder

  • 1/4 tsp oregano

  • 1/8 tsp turmeric

  • 1/8 tsp black pepper

Salad (3 servings)

  • 6 cups spring mix (spinach or romaine also work well)

  • 1/3 cup white onion, thinly sliced

  • 6 baby bella mushrooms, thinly sliced

  • 1 cup cucumber, sliced

  • 1 carrot, shredded

  • 1 avocado, diced

  • 1.5 cups chickpeas, rinsed and drained


Directions

1. Prepare vinaigrette: Add all ingredients to a jar and shake until combined. Store on the counter in an airtight container.


2. Chop all veggies just before serving. Divide evenly into 3 salads.


3. Serve salad with 2 Tbsp lemon herb vinaigrette and 1/2 cup chickpeas.
