Ingredients
Lemon Herb Vinaigrette
3 Tbsp extra virgin olive oil
3 Tbsp lemon juice
1 tsp maple syrup
1/4 tsp sea salt
1/4 tsp onion powder
1/4 tsp oregano
1/8 tsp turmeric
1/8 tsp black pepper
Salad (3 servings)
6 cups spring mix (spinach or romaine also work well)
1/3 cup white onion, thinly sliced
6 baby bella mushrooms, thinly sliced
1 cup cucumber, sliced
1 carrot, shredded
1 avocado, diced
1.5 cups chickpeas, rinsed and drained
Directions
1. Prepare vinaigrette: Add all ingredients to a jar and shake until combined. Store on the counter in an airtight container.
2. Chop all veggies just before serving. Divide evenly into 3 salads.
3. Serve salad with 2 Tbsp lemon herb vinaigrette and 1/2 cup chickpeas.
