Healthy Chicken Waldorf Salad

  • 2 cups diced, cooked, skinless chicken breasts (about 10 oz)

  • 3/4 cup red grapes, halved

  • 1 small apple, diced

  • 1/2 cup walnuts, chopped

  • 1/2 cup celery, chopped

  • 1/2 cup nonfat plain Greek yogurt

  • 1/2 Tbsp apple cider vinegar

  • 1 tsp dried tarragon

  • 1/2 tsp salt


1. In a medium bowl, combine chicken, grapes, apples, walnuts, and celery, stirring gently to combine.

2. In a small bowl, whisk together Greek yogurt, vinegar, tarragon, and salt.

3. Pour yogurt dressing over chicken mixture and gently stir to combine evenly.

Serving suggestions: enjoy this salad as is, or pair with whole grain crackers, bread, or use as topping on a green salad.
