Mexican Tuna Salad

Ingredients

  • 1 tablespoon lime juice

  • Zest of 1 lime

  • 1 tablespoon extra-virgin olive oil

  • 2 5-ounce cans albacore wild tuna, no salt added, drained (Wild Planet is a sustainable brand)

  • 1/2 cup red bell pepper, diced

  • 1/2 cup frozen corn, thawed

  • 15-ounce can black beans, no salt added, rinsed and drained

  • 1/2 teaspoon cumin

  • 2 avocados, cubed

  • 1/2 cup cilantro, chopped

  • 1/2 cup scallions, chopped

  • 1 teaspoon jalapeno, finely chopped (optional)

  • 1/2 teaspoon sea salt

  • 1/2 tsp garlic powder

  • 1/4 tsp ground black pepper

  • 4 corn or whole wheat tortillas



Directions

  1. Combine all of the ingredients in a large bowl. Break up the avocado a little with the back of a spoon for a smoother consistency.

  2. Spoon the mixture into tortillas or enjoy with whole-grain crackers.



Notes:
  • Vegan: omit tuna
