Mexican Tuna Salad

Ingredients
1 tablespoon lime juice
Zest of 1 lime
1 tablespoon extra-virgin olive oil
2 5-ounce cans albacore wild tuna, no salt added, drained (Wild Planet is a sustainable brand)
1/2 cup red bell pepper, diced
1/2 cup frozen corn, thawed
15-ounce can black beans, no salt added, rinsed and drained
1/2 teaspoon cumin
2 avocados, cubed
1/2 cup cilantro, chopped
1/2 cup scallions, chopped
1 teaspoon jalapeno, finely chopped (optional)
1/2 teaspoon sea salt
1/2 tsp garlic powder
1/4 tsp ground black pepper
4 corn or whole wheat tortillas
Directions
Combine all of the ingredients in a large bowl. Break up the avocado a little with the back of a spoon for a smoother consistency.
Spoon the mixture into tortillas or enjoy with whole-grain crackers.
Notes:
Vegan: omit tuna
