1 cup whole grain, brown rice or legume pasta
2 cups fresh spinach, packed
1 cup fresh basil, packed
1/3 cup low-sodium chicken broth or pasta water
2 garlic cloves
1 tsp grated lemon zest
1/4 tsp kosher salt
1/8 tsp ground pepper
2 tablespoons parmesan cheese
2 tablespoons extra virgin olive oil
2 tablespoons walnuts*
Combine stock and garlic in a pot and bring to a boil. Then, simmer for 5 minutes. Allow to cool.
Meanwhile, cook pasta of your choice.
Add basil and spinach to a food processor or blender, and roughly chop.
Add seasonings, lemon zest, parmesan, olive oil, walnuts, and cooled garlic and broth. Blend in food processor or blender until smooth.
Top pasta with pesto and serve.
Toast walnuts for more flavor.
For added protein, top with shrimp, ground turkey, or chicken breast.
