Ingredients
2 tbsps Chives, minced
1/3 Cucumber, chopped
1/3 Orange Bell Pepper, seeded and chopped
1/4 cup Cherry Tomatoes, halved
2 tbsps Pistachios, chopped
2 dashes Black Pepper (or to taste)
1/4 tsp Everything Bagel Seasoning (optional)
3/4 cup Cottage Cheese, Low Fat
Directions
Wash and chop the veggies, chives, and pistachios if needed. If making this dish for meal prep, do all the chopping ahead of time and portion it out into small bags or containers to be assembled the day of.
Combine cottage cheese with 1 tablespoon of chives and pepper in a small bowl.
Layer cucumbers, peppers, and tomatoes on top then garnish with the remaining 1 tablespoon chives, chopped pistachios, and everything seasoning.
Notes
More Flavor: Drizzle a little hot sauce over top.
No Pistachio: Substitute pine nuts, sesame seeds, pumpkin seeds, etc.
