Strawberry Chia Jam

Makes 8 servings Prep time: 1 min Cooking time: 15 min


Ingredients

  • 2 cups strawberries, washed

  • 2 Tbsp chia seeds

  • 2 Tbsp monk fruit


Directions

  1. Set a saucepan over medium heat. Add the berries to the pan and cook until the fruit breaks down, about 5 to 10 minutes. It helps to mash the fruit with the back of a spatula.

  2. Remove the pan from the heat.

  3. Stir in the chia seeds and monk fruit. The jam will take about 5 minutes to thicken. Taste and adjust sweetener as needed.

  4. Transfer the jam to a jar or other storage container once it has cooled to room temperature. The jam will thicken further once completely chilled.

Chia jam can be added on whole grain toast, in PB&J, swirled into Greek yogurt, on whole grain waffles... the possibilities are endless!

 
Notes:
  • Store in the fridge for up to 2 weeks.

  • Strawberries can be swapped for raspberries, blueberries, blackberries, cherries, peaches, apricots, kiwi, or pineapple. Fresh or frozen.

  • Monk fruit can be swapped for your sweetener of choice.
