Apple Coleslaw


Time: 15 min Servings: 8


Ingredients

1 small red or green cabbage, shredded (approx. 6 cups packed)

1 1/2 cups carrots, shredded

1 medium pink lady apple, thinly sliced

1 medium Granny Smith apple, thinly sliced

1/2 cup scallions, sliced

1/2 cup almonds, unsalted & roasted, chopped

1/2 cup dried cranberries, unsweetened


Dressing

3/4 cup 2% plain Greek Yogurt

1/4 cup reduced-fat mayonnaise (made with olive oil)

2 Tbsp 100% maple syrup

2 Tbsp apple cider vinegar

1/4 tsp kosher or sea salt

1/2 tsp ground black pepper


Directions

  1. In a bowl, whisk together Greek yogurt, mayo, maple syrup, apple cider vinegar, salt, and pepper until smooth.


  2. In another bowl, toss together cabbage, carrots, apples, scallions, almonds, and cranberries.


  3. Pour dressing over cabbage mixture and toss to evenly coat. Serve immediately. Enjoy.
