Vegan Chocolate Chip Energy Bites


Time: 10 min Servings: 8 (1 serving = 2 energy bites)


Ingredients

  • 1 cup quick-cook oats*

  • 3 tablespoons flaxseed meal

  • 3 tablespoons hot water

  • 1 tsp vanilla extract

  • 3 Tbsp maple syrup

  • 1/4 cup peanut butter, room temperature or warmed slightly

  • 1 tbsp chia seeds

  • 1/4 cup dark chocolate chips

  • 1/4 cup unsalted almonds*, finely chopped

  • 1 scoop plain, peanut butter, or vanilla protein powder (this recipe used Orgain)


Directions

  1. In a bowl, add all of the wet ingredients and stir together. Add in the remaining ingredients. Mix until well combined.


  2. Roll the mixture into approximately 16 1-Tbsp-sized balls.


  3. Store the energy bites in a single layer in a lined airtight container. Enjoy!



Notes:
  • Storage: Keep in the fridge for one week or the freezer for up to 3 months.

  • Nuts: sub any unsalted nuts, peanuts, and pistachios work well

  • Oats: sub gluten-free oats, if needed
