Vegan Chocolate Chip Energy Bites

Time: 10 min Servings: 8 (1 serving = 2 energy bites)
Ingredients
1 cup quick-cook oats*
3 tablespoons flaxseed meal
3 tablespoons hot water
1 tsp vanilla extract
3 Tbsp maple syrup
1/4 cup peanut butter, room temperature or warmed slightly
1 tbsp chia seeds
1/4 cup dark chocolate chips
1/4 cup unsalted almonds*, finely chopped
1 scoop plain, peanut butter, or vanilla protein powder (this recipe used Orgain)
Directions
In a bowl, add all of the wet ingredients and stir together. Add in the remaining ingredients. Mix until well combined.
Roll the mixture into approximately 16 1-Tbsp-sized balls.
Store the energy bites in a single layer in a lined airtight container. Enjoy!
Notes:
Storage: Keep in the fridge for one week or the freezer for up to 3 months.
Nuts: sub any unsalted nuts, peanuts, and pistachios work well
Oats: sub gluten-free oats, if needed
