Ricotta Cheese Snack


Time: 10 minutes Servings: 1


Ingredients

  • 1/2 cup part-skim ricotta cheese

  • 1/4 cup cucumber, chopped

  • 1/4 cup bell pepper, chopped

  • 1/4 cup cherry or grape tomatoes, halved

  • 1 teaspoon fresh dill, chopped (optional)


Directions

  1. Place ricotta cheese in a small glass or container.


  2. Top with veggies. Sprinkle on dill, if using.


  3. Cover and refrigerate for up to 2 days. Enjoy!

 


Notes:
  • Dill: sub dill for your favorite herb, parsley works well.

  • Vegetables: blanched or roasted asparagus, broccolini or summer squash also pairs well with ricotta.
