Ricotta Cheese Snack

Ingredients
1/2 cup part-skim ricotta cheese
1/4 cup cucumber, chopped
1/4 cup bell pepper, chopped
1/4 cup cherry or grape tomatoes, halved
1 teaspoon fresh dill, chopped (optional)
Directions
Place ricotta cheese in a small glass or container.
Top with veggies. Sprinkle on dill, if using.
Cover and refrigerate for up to 2 days. Enjoy!
Notes:
Dill: sub dill for your favorite herb, parsley works well.
Vegetables: blanched or roasted asparagus, broccolini or summer squash also pairs well with ricotta.
