Cucumber & Edamame Salad

Ingredients
2 tbsps Avocado Oil
1 tbsp Sesame Oil
3 tbsps Rice Vinegar
1 tbsp Soy Sauce, Low Sodium
1 clove of Garlic (minced)
1 Cucumber (large, sliced)
1 cup Frozen Edamame (thawed)
1/4 cup Almonds (chopped, optional)
Directions
In a bowl, whisk together the oils, vinegar, soy sauce, and garlic.
Add the cucumber, edamame, and chopped almonds. Stir well to combine. Divide evenly between bowls or plates and enjoy!
Notes:
More Flavor: Use more sesame oil and less avocado oil. Add grated ginger or chili flakes.
