Cucumber & Edamame Salad



Servings: 2 main / 4 servings side Time: 10 min

Ingredients

  • 2 tbsps Avocado Oil

  • 1 tbsp Sesame Oil

  • 3 tbsps Rice Vinegar

  • 1 tbsp Soy Sauce, Low Sodium

  • 1 clove of Garlic (minced)

  • 1 Cucumber (large, sliced)

  • 1 cup Frozen Edamame (thawed)

  • 1/4 cup Almonds (chopped, optional)


Directions

  1. In a bowl, whisk together the oils, vinegar, soy sauce, and garlic.

  2. Add the cucumber, edamame, and chopped almonds. Stir well to combine. Divide evenly between bowls or plates and enjoy!

Notes:
  • More Flavor: Use more sesame oil and less avocado oil. Add grated ginger or chili flakes.
