Ingredients
1 tablespoon sesame seeds
1 English cucumber, thinly sliced
2 tablespoons fresh lemon juice
1 tablespoon extra-virgin olive oil
¼ teaspoon kosher salt
1 tablespoon fresh dill, chopped
Directions
Place sesame seeds in a small dry skillet over medium heat. Cook stirring for 2 to 3 minutes, until toasted. Let cool.
In a medium bowl, combine cucumber, lemon juice, oil, and salt. Stir in the dill and sesame seeds. Serve immediately or marinate in the fridge for up to an hour. Enjoy!
Notes
Additions: Cherry tomatoes, avocado, red onion
No Dill: Use basil or parsley instead.
