1 can corn, drained and rinsed (frozen works well too)
5 Roma tomatoes, diced
Half jalapeno pepper, seeded and minced
1/4 tsp kosher salt
1/4 tsp black pepper
3-4 Tbsp lime juice
4 garlic cloves, minced
2 1/2 cans black beans, drained and rinsed
1/4 red onion, diced
2 cups arugula
1 avocado, to serve
Small handful of tortilla chips, to serve
1. Mix beans, corn, tomato, jalapeno, and onion in a large bowl.
2. Mix in garlic, salt, pepper, and lime juice.
3. Taste and adjust seasoning as needed.
4. Distribute into 4 portions and serve with 1/4 avocado and a small handful of tortilla chips.
