Mediterranean Tofu Scramble

Ingredients

  • 1 block extra firm tofu

  • 1 Tbsp olive oil

  • 1 bell pepper, diced

  • 1/2 onion, diced

  • 1/2 tsp dried oregano

  • 1/2 tsp dried basil

  • 1/4 tsp paprika

  • 1 tsp turmeric (don't skip)

  • 1/4 tsp salt & pepper

  • 1/2 cup zucchini, finely chopped

  • 1 small tomato, chopped

  • 1/4 cup black olives, sliced

  • 3 slices of whole grain bread (1 slice per serving)

Directions

1. Remove the tofu from the package and drain the liquid. Wrap the block of tofu in some paper towels or a clean dish towel and press to remove excess liquid.


2. Place a large skillet over medium heat and add the olive oil. Sauté the onion and bell pepper for about 5 minutes, or until softened.


3. Add the tofu block to the skillet by breaking it up in your hands or with the spoon in the skillet until it’s a “scramble” texture.


4. Stir in the spices and add the zucchini, tomato, and olives. Cook for another 5-10 mins.


5. Toast bread and serve scramble on top. Enjoy.
