On The Go Lunch Box

Servings: 3 Total time: 20 minutes


  • 6 Egg

  • 3 cups Edamame Pods

  • 3/4 cup Blueberries

  • 3/4 cup Raspberries

  • 3 pieces Babybel Cheese, Light, Mini


  1. Hard boil the eggs: Place eggs in a saucepan and cover with water. Bring to a boil over high heat.

  2. Once boiling, turn off the heat but keep the saucepan on the hot burner. Cover and let sit for 10 to 12 minutes.

  3. Strain the water and fill the saucepan with cold water. Let the eggs sit until cool enough to handle, then peel.

  4. Meanwhile, steam the edamame by placing the bag of frozen shells into the microwave, unopened. Heat for 4-5 minutes. Let stand for 1 minute before opening.

  5. While the eggs and edamame cool, rinse the berries.

  6. Divide the eggs, edamame, fruit, and cheese evenly among the containers. Place in the fridge until ready to enjoy.


No Berries: Swap for the same serving size of another fruit.
