Prune Chia Pudding

Ingredients

  • 1/4 cup Pitted Prunes

  • 1 cup Unsweetened Almond Milk

  • 1/4 cup Chia Seeds

  • 1/2 tsp Vanilla Extract

  • 1 tbsp Ground Flax Seed

  • 1 tbsp Maple Syrup

Directions

  1. Place prunes in a bowl and add hot water until just covered. Soak for 30 minutes until softened.

  2. Add the soaked prunes, almond milk, maple syrup, flax seeds, and vanilla to a blender and blend well until combined.

  3. Pour the prune mixture into a medium-sized bowl and add the chia seeds. Whisk well to combine. Divide into smaller jars or bowls and refrigerate for at least 1 hour to thicken. Stir as necessary.

  4. Enjoy 1 serving for a meal, or eat 1 Tbsp daily for constipation maintenance.

 
Notes

Prune Ratio: 1/4 cup is equal to approximately 4 pitted prunes.

Leftovers: Refrigerate in an airtight container for up to three days.

Additional Toppings: Granola, nuts, seeds, yogurt.

Nut-Free: Use oat milk or coconut milk instead of almond milk.
