Slow Cooker Mashed Cauliflower

Ingredients

  • 1 cauliflower head

  • 4 garlic cloves, peeled

  • 1 cup of water

  • 3/4 cup vegetable broth, low sodium

  • 1/4 cup Parmesan cheese, freshly grated

  • 2 Tbsp butter

  • 1/2 tsp kosher salt

  • 1/4 tsp black pepper

  • Optional: 2 Tbsp. fresh chives or parsley, finely chopped


Directions

  1. Peel the leaves from the cauliflower and cut into medium florets.

  2. Place cauliflower in slow cooker with whole garlic cloves, vegetable broth, and enough water to just cover the cauliflower.

  3. Cook on high for 3 hours, or low for 6 hours.

  4. Once finished, drain the liquid. Add parmesan and butter and mash/blend to desired consistency.

  5. Season with salt and pepper and add fresh herbs (if using).

  6. Place cauliflower mash back into the slow cooker, and set to ‘keep warm’ until ready to serve.
