Tofu "Egg" Scramble Tacos

  • 1 block extra firm tofu

  • 1 Tbsp olive oil

  • 1 bell pepper, diced

  • 1/2 onion, diced

  • 1 tsp chili powder

  • 1/4 tsp garlic powder

  • 1 tsp turmeric (don't skip)

  • 1/4 tsp salt & pepper

  • 1/2 cup salsa

  • 1 avocado


  • 3 corn tortillas


  1. Remove the tofu from the package and drain the liquid. Wrap the block of tofu in a paper towel and press to remove excess liquid.

  2. Place a large skillet over medium heat and add the olive oil. Sauté the diced onion and bell pepper for ~5 minutes, or until softened.

  3. Add the tofu block to the skillet by breaking it up in your hands or with the spoon in the skillet until it’s a “scramble” texture.

  4. Add the spice mix (chili powder, garlic powder, turmeric, salt and pepper) and stir until everything is heated through.

  5. Serve as a scramble with salsa and avocado on top, or as tacos in corn tortillas.

  • Personalize this recipe with any seasonings or vegetables you like.

  • Keeps for 3 days in the refrigerator.
