Ingredients
1 block extra firm tofu
1 Tbsp olive oil
1 bell pepper, diced
1/2 onion, diced
1 tsp chili powder
1/4 tsp garlic powder
1 tsp turmeric (don't skip)
1/4 tsp salt & pepper
1/2 cup salsa
1 avocado
Optional:
3 corn tortillas
Directions
Remove the tofu from the package and drain the liquid. Wrap the block of tofu in a paper towel and press to remove excess liquid.
Place a large skillet over medium heat and add the olive oil. Sauté the diced onion and bell pepper for ~5 minutes, or until softened.
Add the tofu block to the skillet by breaking it up in your hands or with the spoon in the skillet until it’s a “scramble” texture.
Add the spice mix (chili powder, garlic powder, turmeric, salt and pepper) and stir until everything is heated through.
Serve as a scramble with salsa and avocado on top, or as tacos in corn tortillas.
Notes:
Personalize this recipe with any seasonings or vegetables you like.
Keeps for 3 days in the refrigerator.
