2 cups fresh watermelon, cut into cubes
1/2 lime, juiced
1 cup sparkling water or club soda
Mint leaves as a garnish (optional)
Blend watermelon with lime juice in a blender until smooth. Pour into two glasses.
Top each with 1/2 cup sparkling water or club soda and mint leaves. Gently stir.
Chill in the fridge for a few hours or serve immediately with ice.
