Watermelon, Strawberry, & Mint Salad

Ingredients

  • 1 1/2 cups Watermelon (small, cut into cubes)

  • 1 1/2 cups Strawberries (chopped)

  • 3 Tbsps Mint Leaves (chopped, divided)

  • 1 Tbsp Extra Virgin Olive Oil

  • 1/2 cup Feta Cheese, Reduced Fat (crumbled)


Directions

  1. In a large bowl combine the watermelon and strawberries.

  2. Crumble in feta and gently toss gently to combine.

  3. Divide into portions and store in the refrigerator.

 
Notes:
  • Leftovers Refrigerate in an airtight container for up to three days.

  • More Flavor Add fresh basil or a squeeze of lime.

  • Bigger Portion Add slices of cucumber for more volume.

  • No Feta Use goat cheese.

  • Dairy-Free Omit the feta cheese.
