1 1/2 cups Watermelon (small, cut into cubes)
1 1/2 cups Strawberries (chopped)
3 Tbsps Mint Leaves (chopped, divided)
1 Tbsp Extra Virgin Olive Oil
1/2 cup Feta Cheese, Reduced Fat (crumbled)
In a large bowl combine the watermelon and strawberries.
Crumble in feta and gently toss gently to combine.
Divide into portions and store in the refrigerator.
Leftovers Refrigerate in an airtight container for up to three days.
More Flavor Add fresh basil or a squeeze of lime.
Bigger Portion Add slices of cucumber for more volume.
No Feta Use goat cheese.
Dairy-Free Omit the feta cheese.
