Healthy Nut and Seed Cookies

Time: 25 min Yields: 8 cookies (1 cookie per serving; limit 2 per day)
Ingredients
1/2 cup dates, chopped
1/2 cup walnuts, chopped
2/3 cup pecans, chopped
1/4 cup pumpkin seeds
1/3 cup sunflower seeds
1 tablespoon sesame seeds
1/3 cup almonds
1 tablespoon flaxseeds
1 tablespoon light agave
1 medium egg white
Directions
In a medium mixing bowl, add all the ingredients and mix thoroughly.
On a sheet pan lined with parchment paper and sprayed lightly with avocado oil, form the cookies using a 3-inch ring mold. Fill the ring mold to about 3/4 capacity.
Bake at 285° Fahrenheit for 17-20 minutes until cookies are firm.
Cool and serve.
Notes
Nuts: Any combination of your favorite nuts can be used.
