12 Medjool dates
12 teaspoons natural peanut butter, unsalted
3.5 ounces (100 grams) 60% cacao dark chocolate, finely chopped
2 tablespoons pistachios, roasted and lightly salted, finely chopped
2 tablespoons almonds, roasted and lightly salted, finely chopped
Cut the dates down the center lengthwise and remove the pit.
Fill each date with 1 teaspoon of peanut butter.
Melt the chocolate and place the nuts on a plate or parchment paper.
Dip half of each date in the melted chocolate and then dip in the pistachios or almonds.
Place dates on a piece of parchment paper or plate.
Refrigerate for 20 minutes before serving.
