Strawberry Chia Pudding

Servings: 1 Prep time: 5 min Setting time: 3-24 hrs



Ingredients

  • 3 Tbsp chia seeds

  • 1 cup unsweetened almond milk

  • 1-2 Tbsp monk fruit sweetener

  • 1/3 cup chopped strawberries

  • 1/2 cup plain Greek yogurt


Directions

  1. Mix all ingredients of the base recipe in a bowl or cup. Stir until the seeds are well combined with the milk.

  2. Let sit in the refrigerator overnight, or for at least 3 hours. It's ready when the chia seeds have soaked up the liquid. *Tip: Give it an occasional stir to make sure it's all well-combined.

  3. Give it one good stir in the morning, then grab and go for a quick breakfast or enjoy later for a healthy dessert.

 
Notes:
  • Greek yogurt can be swapped for plain dairy free yogurt to make this vegan.

  • This is a great recipe for meal prep. Multiply as needed for extra servings.
