Ingredients
2 large or 3 medium ripe bananas
4 oz (approx. 1 1/4 cups) quick oats
2 large eggs
1/2 cup peanut butter, unsalted (almond or cashew butter works well too)
1 tsp vanilla
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp kosher salt
Directions
1. Preheat oven to 350 degrees.
2. Line a muffin pan with 12 muffin liners.
3. Mash the bananas in a large mixing bowl. Then, add the remaining ingredients and mix well.
4. Spoon the mixture into the pan and bake for 20-25 minutes.
5. When baking is finished, take the muffins out of the pan and allow them to cool completely.
