Benefits of a healthy lunch:

  • Saves time

  • Saves money so you're not eating out

  • You're more organized

  • You're less stressed

  • You'll have more energy because you're eating healthy, unprocessed food

Lunch ideas:

  • Wraps & Sandwiches

  • Soups

  • Salads

  • Rice Bowls

Traditional sandwiches and wraps with white bread or flour tortillas and cold cuts aren’t super healthy so instead cook up chicken breast, fish or tofu and use in wraps or sandwiches or even just cheese and fresh or roasted vegetables will give you enough protein to keep you full and satisfied throughout the day.

Soups are great because you can make them in bulk and freeze them for later. Try some of these heartier soups which mostly are vegan/vegetarian-friendly too. Soups can be super budget-friendly as long as you have access to a microwave at work.

Salads are of course a go-to for healthy lunches, but they don't have to be boring. Be sure to mix up the toppings and salad dressings. Try using mason jars when meal prepping them for the week because you can keep the dressing and protein in the bottom then layer in your veggies. Try some of these non-traditional salads.

Rice Bowls are great for when you're looking to eat lunch on a budget. Typically, all you need is a can of beans, some brown rice, quinoa or wild rice, veggies and marinated tofu, tempeh, chicken or ground turkey. Throw it all together and top with salsa, chimichurri or a vinegar-based coleslaw and Walla! Again, these can be made ahead of time and several bowls can be made at once so you have lunch or dinner for multiple days. Get creative and try mixing together different things.
